The Scotch Bonnet peppers pack flavours and depth that means this sauce makes a great marinade. Its fruitiness begs to be brushed on to white fish fillets or slathered on slabs of tofu that is then grilled. Delicious mixed through hot plain rice with fresh parsley and pine nuts. So pretty it is almost too good to eat!

For those that like a sharp hit from a good dose of added cider vinegar. It bombs its way through greasy fatty food we all love and it’s perfect for wings. Add it to a charcuterie tray as it compliments cheese or pop it onto your pizza slice.
